This morning I decided to try my hand at making applesauce pancakes. I found a few recipes online and made a few modifications (like I always do). They turned out AMAZING!
Applesauce Pancakes
(makes about 16 pancakes, serves 4 adults)Ingredients:
- 2 eggs
- 1 c milk
- 1 c applesauce
- 1/4 c oil
- 2 c flour
- 1/2 tsp cinnamon
- 2 TB sugar
- 2 TB baking powder
- 1 tsp salt
Directions:
- Beat the eggs until frothy. Add the milk, applesauce, and oil. Mix well.
- In a separate bowl, sift together the flour, cinnamon, sugar, baking powder, and salt.
- Mix together the dry and wet ingredients. DO NOT OVERMIX. There will be lumps and that is okay. If you overmix your pancakes will be rubbery and not good eats.
- Cook pancakes on a griddle. I use heaping 1/4 c measuring cup to measure each pancake. It makes a good size pancake.
- Eat and enjoy!
